Ingredienti

  • One. a clean white wash, cotton, no synthetics
  • One. a balcony with sun, ideally facing south
  • Two. capfuls of Lenzuola al Sole (or, allegedly, the family bottle)
  • A pinch. patience. real patience. not the polite kind.
  • To taste. bergamot rind, if it is in season
  • Nessuno. fabric softener. ever. nessuno. no.
  • Optional. an old radio. the news. an opinion.
  1. Separate the whites. Talk to them if necessary. They will respond, eventually, by being whiter. Civilisation matters.
  2. Wash at thirty degrees. Not forty. Not sixty. Nonna will know if you cheat. The fabric remembers betrayal.
  3. Two capfuls. Not one. Not three. Fear is unattractive — generosity is also unattractive. Somewhere in the middle, there is two. This is not a metaphor.
  4. Hang in the sun. Not "near a window." In the sun. Outside. With air. If you do not have a balcony, get a friend with a balcony.
  5. Wait one hour longer than you think. Then another half. The hour you do not want to wait is the hour the smell becomes itself.
  6. Fold while warm, in thirds. Iron the pillowcases. Yes, the pillowcases. You knew, when you started reading, that this was coming.
  7. Place in the linen cupboard. Close the door slowly, with respect. Nonna closes doors with respect. She does not slam them. Except at the children.
  8. Wait until evening. Smell the cupboard. Make a face. Reconsider your year. This is the whole recipe.
